Enchilada con pollo
Ingredientes
12 tortillas de maíz
1 pechuga de pollo sin huesos ni piel
3 tomates
2 chiles guajillos
1 cebolla
1 diente de ajo
1 pizca de tomillo
1/2 taza de aceite vegetal
4 cucharadas de crema de leche
3 cucharadas de queso parmesano
Sal y pimienta al gusto
Preparación
Paso 1: PARA LA SALSA:
Paso 2: QUITA las semillas a los chiles guajillos y ponlos en agua hirviendo de manera que los cubra, déjalos 3 minutos.
Paso 3: RETIRALOS del agua y licúalos con ½ cebolla, 3 tomates, 1 diente de ajo, 1 pizca de tomillo, sal y pimienta al gusto.
Paso 4: PON la mezcla en un sartén con un poco de aceite y la crema de leche, deja hervir la salsa durante 2 minutos a fuego bajo revolviendo constantemente.
Paso 5: PARA EL POLLO:
Paso 6: COCÍNALO con cebolla, ajo, sal y pimienta, reserva y desmecha.
Paso 7: PARA LAS TORTILLAS:
Paso 8: SUMERGELAS en aceite caliente por 1 minuto, retíralas y seca el exceso de grasa, después pásalas por la salsa, pon sobre ellas el pollo y enrolla.
Paso 9: SIRVE 3 tortillas por plato y rocíalas con queso parmesano.
