Papas a la huancaína
Ingredientes
24 papas criollas pequeñas
1 frasco de ají amarillo en pasta
1 cebolla roja
1 queso fresco de cabra
1 queso campesino
4 galletas de soda
1 taza de aceite vegetal
1 tarro de leche evaporada gloria
1 frasco de aceitunas moradas
Brotes o flores comestibles
Preparación
Paso 1: DORAR en una sartén caliente, un poco la cebolla roja con la pasta de ají amarillo.
Paso 2: LICUAR y empezar a incorporar el resto de ingredientes: el queso, las galletas de soda, un chorrito de aceite vegetal, la leche evaporada. Licuar muy bien hasta que quede una salsa cremosa.
Paso 3: SERVIR las papas bañándolas generosamente con la salsa y disponer sobre cada bocado aceitunas moradas. Decorar con brotes o flores.
