Pulpo al olivo
Ingredientes
½ k de pulpo
14 aceitunas negras, despepitadas
3 cucharadas de jugo de limón
1 ¾ taza de aceite de oliva para preparar la mayonesa
2 cucharadas perejil finamente picado
2 huevos
Sal
Pimienta
3 cucharadas de aceite de oliva para decorar
1 papa mediana
Preparación
Paso 1: LIMPIA el pulpo y cocínalo en una olla con agua hirviendo que lo cubra. Con el diente de ajo entero, la hoja de laurel y 1 papa mediana. El pulpo estará cocido (suave) cuando la papa esté tierna (de 30 a 40 min. aproximadamente).
Paso 2: LICUA los huevos, sal, jugo de limón, pimienta e ir añadiendo de a pocos el aceite de oliva hasta formar una mayonesa espesa. Luego agrega las aceitunas y licua hasta que queden totalmente deshechas.
Paso 3: CORTA el pulpo en tajadas, acomoda en una fuente, baña con la salsa de aceitunas y adorna con 3 cucharadas de aceite de oliva formando hilos y perejil picado.
