Tikka masala
Ingredientes
PARA EL ESCABECHE:
1 taza de yogurt natural
1 cucharada de pasta de jengibre
1 cucharada de pasta de ajo
2 cucharaditas de chile rojo en polvo
1 cucharadita de garam masala en polvo
2 cucharadas de zumo de limón
2 cucharadas de aceite de mostaza
Sal al gusto
PARA LA CEBOLLA TOMATE MASALA:
2-3 cucharadas de aceite
1 cucharadita de semillas de comino
4 cebollas
7-8 dientes de ajo picados
1 cucharadita de pasta de jengibre
1 cucharadita de pasta de ajo
3 tomates grandes picados
1/4 de taza de puré de tomate
1 y 1/2 cucharadas de polvo de chile rojo
1/4 de cucharada polvo de cúrcuma
1/2 taza de agua
Sal al gusto
Preparación
Paso 1: CALIENTA el aceite en una sartén. Añade las semillas de comino y cuando empiecen a cambiar de color, añade la cebolla y saltéala hasta que esté bien dorada. Agrega el ajo y saltea hasta que estén ligeramente doradas. Añade la pasta de jengibre y la pasta de ajo y continua sofriendo por un minuto más. Agrega los tomates, la sal y cocina cubierto a fuego lento hasta que los tomates estén suaves y carnosos. Añade el puré de tomate, polvo de chile rojo, polvo de la cúrcuma, el cilantro en polvo, comino en polvo y media taza de agua y cocina, tapado, a fuego medio durante tres o cuatro minutos, o hasta que el aceite se separe. Agrega las hojas de cilantro, garam masala en polvo y crema.
