Bruschetta de queso con relish de tomate cherry
Ingredientes
RELISH DE TOMATE:
3 cucharadas de aceite de oliva
1 cucharada de ajo finamente picado
4 tazas de tomate cherry
1/4 de taza de azúcar común
1/4 de taza de vinagre de vino tinto
Sal y pimienta al gusto
CEBOLLA CARAMELIZADA:
3 cucharadas de aceite de oliva
4 tazas de cebolla de huevo roja en julianas
2 cucharadas de azúcar morena
2 cucharadas de vinagre de frutas
Sal y pimienta al gusto
BRUSCHETTA:
Aceite de oliva para sellar
2 berenjenas
10 rebanadas de queso costeño
10 hojas de rúgula para servir
10 rodajas de pan
Preparación
Paso 1: RELISH DE TOMATE:
Paso 2: PON en una sartén con aceite de oliva el ajo, el tomate cherry, el azúca, el vinagre de vino tinto, la sal, la pimienta y deja deshogar durante 20 minutos hasta que se convierta en una pasta.
Paso 3: CEBOLLA CARAMELIZADA:
Paso 4: QUEBRANTIZA la cebolla en un sartén con aceite de oliva . Agrega el vinagre de frutas y la azúcar morena durante 20 minutos hasta que se convierta en un caramelo. Reserva.
Paso 5: DESHIDRATA las berenjenas con sal y después de 10 minutos sécalas con un papel absorbente y fríelas en aceite de girasol hasta que estén doradas.
Paso 6: PON sobre cada tajada de pan una hoja de rúgula, el queso costeño frito, una laja de berenjena, el relish de tomate y por último las cebollas caramelizadas.
