Dados de ventresca de atún
Ingredientes
60 grs de atún fresco
40 grs de sandía
20 grs de queso feta
5 grs de ají dulce
20 grs de azúcar
20 cc de vinagre blanco
20 grs de rúcula
Preparación
Paso 1: PARA EL ATÚN:
Paso 2: CORTAR el atún en bastones grandes y cocinar en una plancha hasta quedar totalmente cocido, reservar.
Paso 3: PARA EL SIROPE:
Paso 4: PICAR finamente el ají dulce en brunoise, reservar.
Paso 5: COCINAR el vinagre blanco con el azúcar en una olla hasta hervir, retirar del fuego y agregarle el ají dulce picado, luego reservar.
Paso 6: PARA EL MONTAJE:
Paso 7: ASAR en la plancha cubos de sandía de aprox. 5 cms x 1.5 de alto, ponerlo en el fondo del plato y encima colocar el atún previamente cortado de manera similar a la sandía.
Paso 8: COLOCAR encima rúcula y luego cortar queso feta y también colocarlo arriba del atún a manera de sándwich, por último, bañar con el sirope de ají.
