Espuma helada de manzanas
Ingredientes
1 RINDE 6 - 8 PORCIONES
1 3 manzanas verdes
1 200 grs. de azúcar
1 200 mls. de crema de leche
1 3 claras de huevo
1 Jugo de medio limón
1 Papel film
Preparación
Paso 1: LICÚA las manzanas con el azúcar y el jugo de limón hasta obtener una pasta algo líquida.
Paso 2: BATE la crema de leche a punto casi firme y claras a nieve.
Paso 3: MEZCLA las manzanas con la crema de leche y por último agrega las claras batidas en forma envolvente.
Paso 4: LLEVA al congelador y revuelve de vez en cuando hasta que tome consistencia. Vierte en un molde previamente forrado en papel film y lleva al congelador.
Paso 5: DESMOLDA una vez que esté bien congelado, corta en tajadas y deja descongelar un poco antes de servir. Acompaña con un coulis de fresas especiado con canela en rama, clavos de olor y un poco de pimienta negra.
