Tarta para el desayuno
Ingredientes
125 gr mantequilla fría en cubos
250 gr harina suave, cernida
125 gr de queso crema
100 gr de queso monterrey Jack o muenster
130 gr de mozzarella
30 gr de cebolla de rama
100 gr de tocineta o panceta
50 ml-100 ml agua fría
7 huevos
sal y pimienta al gusto
Preparación
Paso 1: PRECALIENTA el horno a 350º F.
Paso 2: HAZ un volcán, pon la mantequilla, trabaja la materia grasa rápidamente con la harina hasta arenar (sablear).
Paso 3: VUELVE a formar un volcán, pon en el centro la sal, el azúcar (si es dulce) el huevo, la yema y el agua; trabaja rápidamente hasta integrar los ingredientes. Homogenizar (frasear) con el talón de la mano.
Paso 4: PROTEGE con film la masa, aplana y reposa en refrigeración al menos 30 minutos.
Paso 5: RETIRA, trabaja rápidamente, extiende con un rodillo, a 3mm. Cubre el molde, corta el excedente de masa, pon papel parafinado arrugado sobre la masa, cubre con material de carga, cocina 12 min a 180° (cocción a blanco) el aspecto debe ser seco y blanco.
Paso 6: FRÍE la tocineta hasta que este mas o menos tostada. Retira el exceso de grasa.
Paso 7: CORTA la tocienta en cuadros de más o menos 2cm x 2cm. PICA la cebolla en chifonade, ralla el queso y mezcla con los huevos restantes (previamente batidos).
Paso 8: PON la mezcla en la base y lleva al horno a 400º F durante 23 mins.
