Sopa clásica de cebolla francesa
Ingredientes
15 ml de aceite
30 gr de mantequilla
3 cebollas blancas cortadas en pluma
15 gr de azúcar morena
15 ml de vino blanco
1 Litro de fondo de ave
1 pan francés
50 gr de queso parmesano
Sal
Pimienta negra
Preparación
Paso 1: CARAMELIZA las cebollas agregando la mantequilla a una sartén a fuego medio hasta que se derrita, luego pon las cebollas y mezcla constantemente hasta que estén traslucidas. Agrega el azúcar morena y sigue mezclando con frecuencia hasta que se tornen de color caramelo. Añade el vino blanco y deja cocinar por 5 minutos más para que se evapore el alcohol.
Paso 2: PON en una olla las cebollas caramelizadas y el fondo de ave dejando cocinar a fuego medio hasta que el líquido se reduzca a una tercera parte. Agrega sal y la pimienta al gusto.
Paso 3: CORTA el pan francés en trozos de 2 centímetros y resérvalos.
Paso 4: PRECALIENTA el horno a una temperatura de 180°C.
Paso 5: LLEVA la sopa de cebolla a un tazón y ponle encima el pan francés junto con el queso parmesano. Lleva al horno y deja que se gratine el queso en la parte superior del pan.
