Turrón de montelimar
Ingredientes
400 gr de miel
80 gr de claras
320 gr de azúcar
70 gr de glucosa
Agua
550 gr de almendras
80 gr de pistachos
Preparación
Paso 1: TUESTA las almendras, pistachos y avellanas.
Paso 2: COCINA la miel a 130°C.
Paso 3: COCINA en una cacerola aparte, 300gr de aúzar, la glucosa y el agua hasta que llegue a 140°C.
Paso 4: BATE las claras a punto de nieve con la miel y 20gr de azúcar. Reduce la velocidad y vierte el almíbar de azúcar y la glucosa lentamente en forma de hilo.
Paso 5: CAMBIA el batidor por la paleta. Sigue batiendo y seca con la ayuda de un soplete. El merengue tiene que formar una pasta. Controlar el grado de cocción con los dedos en agua fría.
Paso 6: COCINA hasta que se pueda formar una bolita. Incorpora las almendras y pistachos calientes.
Paso 7: VIERTE el turrón sobre un tapete siliconado. Estira sobre este, deja enfriar y corta.
