Biscotti alle mandorle
Ingredientes
PARA LOS BISCOTTI:
250 grs. de mantequilla sin sal
150 grs. de azúcar
2 yemas de huevo
2 cucharadas de ron
1 cucharadita de esencia de vainilla
1 pizca de sal
350 grs. de harina
150 grs. de almendras o pistachos partidos
4 cucharadas de leche entera
Vinylpel o papel parafinado
PARA LA CUBIERTA:
100 grs. de chocolate semi-amargo
150 grs. de azúcar pulverizada
15 grs. de aceite de coco
4 cucharadas de leche entera
Preparación
Paso 1: BISCOTTI:
Paso 2: DESMENUZA e integra la mantequilla a temperatura ambiente, con el azúcar, las yemas, el ron, la esencia de vainilla, la sal y bate hasta obtener una consistencia esponjosa. Mezcla la harina con las almendras e integra con la mezcla anterior.
Paso 3: AGREGA poco a poco las cuatro cucharadas de leche. Compacta la mezcla en un molde recubierto con vinylpel o papel parafinado y deja reposar.
Paso 4: VIERTE la masa sobre una lata engrasada y córtala en bastoncitos. Precalienta el horno a 170-180 ºC y hornea durante 15 minutos o hasta dorar. Deja enfriar.
Paso 5: CUBIERTA:
Paso 6: FUNDE el chocolate al baño maría, agrega el azúcar, la leche y el aceite de coco e integra hasta homogenizar.
Paso 7: BAÑA los Biscotti y esparce con los pistachos o almendras.
