Sopa de dos colores
Ingredientes
1 libra de ahuyama cruda
1 libra de papa criolla
2 litros de fondo de pollo, carnes o vegetales
Sal
Pimienta
Nuez moscada
200 ml de suero costeño
1 kilo de tocino ahumado
Vinagre balsámico
Panela
Ajo
Romero
Preparación
Paso 1: RETIRA la piel de la ahuyama y condimenta con ajo y romero y deja marinando de un día para otro.
Paso 2: COCINA la ahuyama en el horno a calor máximo.
Paso 3: HAZ el caldo de vegetales e incorporalo a la ahuyama picada en cuadritos y cocina al fuego, adiciona un chorrito de jugo de naranja y nuez moscada.
Paso 4: COCINA la papa criolla con cáscara, adiciona sal y pimienta.
Paso 5: AGREGA limón y pimienta al suero costeño.
Paso 6: CARAMELIZA el tocino con la panela y el vinagre balsámico, luego córtalo en trocitos.
Paso 7: SIRVE suero en el fondo del plato y luego las dos sopas al mismo tiempo, adiciona tocino encima.
